La Comida Argentina (Tradicional): Chimichurri

You do not NEVER have A1 sauce or ketchup with Argentine beef. Instead, you are offered either Chimichurri, Provenzal or Salsa Criolla.

Chimichurri is an herbal mixture usually containing garlic, parsley, paprika, vinegar and oil. It always has to be present on the table, when you have an asado. There are two versions of chimichurri – verde y rojo. It may be used as a marinade or bread dip.

Provenzal – parsley and garlic mixture.
